Makes: 4-6 soup bowls
Enjoy this comfort and healthy soup at any time.
1 pound lentils
3 fresh tomatoes chopped
1 cup carrots, peeled and chopped
2 garlic cloves finely chopped
1/2 onion finely chopped
1 Tbs. olive oil
1 tsp salt.
4-6 sausages, slices (optional)
Heat the oil in a large pot. Add onion and garlic and cook until translucent, about 3-5 minutes. Add lentil and toss, cover with water and add chopped tomatoes. Cook until lentil are almost done, add carrots, sausage and salt.
Serve with white rice and garnish with fresh cilantro.
