Fresh Chicken Salad

This salad is ideal summer dish.


2 cups chopped green apples 1 chicken breast (cooked and chopped) 1 cup seedless green grapes chopped 1 cup chopped celery ½ cup red onion chopped ¼ cup fresh cilantro chopped ½ cup almonds chopped ½ cup natural yogurt 2 Tbs. mayonnaise 1 Tbs. mustard Salt to taste Fresh black pepper to taste Lettuce for garnish the plate Parsley to garnish


In a big bowl toss together chicken, apples, grapes, celery onion, cilantro and almonds.

In a small bowl combine yogurt, mayonnaise, mustard, salt and pepper.

Then add to the chicken mix and place the salad over a simple layer of lettuces.

Garnish with parsley.

Serve cold or a room temperature.

Tip: you can serve this fresh salad as an appetizer serve in a small plate.
