Pumpkin Soup

This exquisite soup is appropriate for such occasions. 

 

Ingredients:

 

3 to 4 cups pumpkin puree (homemade) made from roasted pumpkin

½ cup water or vegetable broth 

½ cup cream or milk

½ red onion chopped

1 clove garlic minced

2 Tb. Olive oil

½ tsp. nutmeg

Salt to taste

Fresh pepper to taste

Fresh curly parsley for garnish

Bread 

 

Preparation:

 

Sautee onion and garlic in olive oil until soft and set aside.

 Blend together pumpkin puree, water or vegetable broth, cream and garlic mixture, salt, pepper and nutmeg and blend until mixture are incorporate and smooth.

Transfer soup mixture to a pot and bring to boil in a moderate low heat.

Serve hot with bread on the side and garnish with fresh curly parsley.
