1 red onion thinly sliced
3 radishes very thinly sliced
4 Tbs. Extra olive oil
Sea salt to taste
Fresh black pepper to taste
1 tsp. ground chili pepper
2 Tbs. fresh lemon juice
Fresh mint leaves to garnish
Cut watermelon in half and scoop out the pulp and chunk 1 inch about 4-5 cups
Clean the cavity to use as a bowl.
In a big bowl toss watermelon chunks, radishes and red onion slices.
In a small bowl whisk olive oil, lemon juice sea salt, pepper and ground chili and drizzle over the salad just before serve.
Garnish with mint leaves.
Optional: arrange individual plates with arugula to serve the salad.
