Roasted Asparagus Bruschetta

Delicious recipe for a fancy summer snack. Enjoy it outdoors!!!! Serve 6


1 1/2 lb. fresh asparagus ½ cup fresh parmesan shave 200 g Mascarpone Cheese 6 slice ciabatta bread 4 garlic cloves, minced 2-3 T extra virgin olive oil plus extra to drizzle Sea salt to taste Fresh black pepper to taste Arugula for garnish


Preheat oven to 400F

Heat oil and garlic in a small saucepan over medium-low heat for several minutes. Set aside.

Wash and discard asparagus end pieces. Then, lay asparagus over a line parchment paper line sheet tray. Drizzle asparagus with extra olive oil, sea salt and fresh black pepper and bake for about 8 to 10 minutes.

Brush both sides of the bread slices with the garlic olive oil. Grill the bread for both sides. Spread one side with mascarpone cheese and place some roosted asparagus, sprinkle with parmesan cheese and garnish with arugula.

Serve immediately.
