Watermelon Granita

When summer is here nothing better than a refreshing granite. It’s absolutely perfect for a hot weather.
Ingredients
1 watermelon (cut in half and save one half rind to serve the granita later)
¼ cup squeeze fresh lemon juice
1 piece lemon zest
½ cup sugar
2 oz. vodka
Mint for garnish
Preparation
Cut watermelon in chunks, about 7 to 8 cups.
Blend together watermelon, sugar, lemon juice and lemon zest. Blend until smooth. Strain the mixture, add vodka.
Transfer the mixture to a glass or metal dish. Freeze at least 1 hour before the first scrape. Scraping the top with a fork or spoon. Repeat 3 times every hour.
When granite is done, serve in the watermelon cavity and garnish with mint leaves.
Tip: You don't need to add any water since there's plenty of liquid from the watermelon!
