Granita is a fancy semi-frozen dessert. It’s very unique
½ cup squeeze fresh lemon juice
3 large cucumbers peeled (cut in half)
1 cup water
3 sprigs peppermint
½ cup sugar
2 oz. vodka (optative)
Fresh cherries for garnish
Blend together cucumber, lemon juice, sugar, water and peppermint.
Strain the liquid. Add vodka and mix well. Pour the mixture into a glass casserole dish such a Pyrex. Place the dish into the freezer to chill. After 45 minutes scrape the mixture with a fork to break up the crystals. Place the dish in the freezer again. Repeat at least 3 times every 45 minutes.
Serve in a fancy glass and garnish with cherries.
Tip. You can replace cucumber for green apples.
