Creamy Zucchini

3 large zucchinis, cut in large pieces

½ onion sliced

1 garlic clove, finely chopped

1 tsp. olive oil

¼ cup water

1 cup milk or cream

Salt and pepper to taste

Curly parsley to garnish




In a large pot over medium heat, heat olive oil, add onion slices and garlic, until soft. Add zucchini pieces and toss. Reduce heat and stir in water. Cover and bring to boil until done.

Remove from heat and blend, add milk until smooth. Put the mix in the pot and bring to boil, taste salt and pepper.

Serve hot and garnish with curly parsley.
