Delicious!!!! and very comfort food for the winter.
1 1/2 cups white rice ( long grain)
3 can ( 4 oz each)squids ( pieces ) in their own ink
1 cup fresh celery ( chopped )
1 cup green pepper (chopped)
2 garlic cloves ( finely chopped)
1 cup frozen sweet peas
2 Tbs. olive oil
1 tsp. Sea salt
2 cups water
In a large saucepan over medium warm olive oil. Stir in celery, green pepper and garlic, cook for about 3-5 minutes or until soft. Stir in rice and salt, toss, then add the squid with their ink, add 2 cups water and sweet peas. Leave to boil, when water is reduce cover and reduce heat to low. Cook for 20 minutes, turn off the heat and leave the rice 10 minutes more before serve.
