Sugar Cookie Cream Sandwiches

Have a romantic valentines day with these sweet desserts with your loved ones.


1 cup (2 sticks) butter, softened 1 cup sugar 1 egg 1 teaspoon vanilla 2 1/4 cups flour, sifted Easy Buttercream Frosting


Preheat oven to 350˚F. In a mixing bowl, using an electric mixer set on medium-high, beat together butter and sugar until creamy. Add egg and vanilla and beat well. Stir in flour until ingredients are well combined, beating slowly or folding with spatula. Roll out on floured surface to ¼ inch thick and cut into desired shapes with cookie cutters. Alternatively, Form dough into small balls and place them 2 inches apart on an ungreased baking sheet. Flatten balls gently with a fork, pressing crosswise to make a grid pattern. Bake 10 to 12 minutes or until golden. Cool 5 minutes on baking sheet before removing to wire rack. Once cookies are completely cool, spread half the cookies with 1 teaspoon Easy Buttercream Frosting and top with the remaining cookies to form a cream-filled sandwich. Decorate, if desired, with piped frosting for tops and sprinkles, draggees, or other embellishments for the cream sides.
