Red Lentil Soup

This rich and healthy main dish is very easy to make. Yummy!!!!!! Serve with brown rice on the side.


1 cup red lentil

2 1/2 cups water

1 glove garlic, mince

1 small fresh jalapeño pepper

1/2 red onion ( sliced thin)

2 tomatoes (chopped)

2 cups potatoe (chopped)

4 sausages (opcional)

1 tsp. Turmeric

1/2tsp. Paprika

1/2 tsp. ground ginger

1 Tbsp.olive oil

1 tsp salt

Fresh cilantro to garnish


Rinse the lentil

In a medium saucepan over medium low heat, bring to a boil red lentil and water. Stir in onion, garlic, tomato, potatoes and fresh jalapeño. Cover and let it simmer for about 30 minutes.

Add salt, stir in sausages in small pieces then, stir in warm olive oil.

Olive oil

In a small saucepan over medium heat, warm olive oil with turmeric, paprika and ginger, for about 1 minute. Stir in to lentils and toss. Serve hot and garnish with fresh cilantro
