A fresh and delicious creamy asparagus soup. This is ideal when spring arrives.
1 pound fresh asparagus (tough ends discarded)
1 Tb. Butter
1/2 cup milk or heavy cream
1 cup chicken or vegetable broth
1/2 onion finely chopped
Salt and pepper to taste
6 roasted asparagus to garnish
Wash and chopped asparagus.
Sauté onion with butter until translucid.
Add asparagus, stir in broth. Bring to a boil, then reduce to a simmer, until asparagus are tender.
Purée or blend the soup.
Stir in milk and season with salt and pepper to taste .
Serve hot and Garnish with roasted asparagus.
