Fresh Asparagus Frittata

Delicious for breakfast  or brunch

 

Ingredients 

 

6 organic eggs 

Fresh asparagus (about 10) cut in pieces  

1 fresh tomato chopped

1/4 cup organic fat free milk

1/4 cup Parmesan cheese (shredded) 

1 tbs. olive oil

3 tbs. butter

Salt and pepper to taste

 

Preparation

 

Preheat oven 350F

In a medium  bowl mix together eggs, milk, salt and pepper. Set aside.

Warm olive oil and butter in a medium skillet. Add fresh asparagus until tender about 3 minutes add fresh tomato. Add egg mixture, add cheese over the mixture and cover for about 5 minutes. Put uncover in the oven until done.
