French Onion Pastry Puffs

Bites for Thanksgiving! Surprise your guest with those little delicate bites. For the onions
Ingredients
2 medium onion finely chopped 1/2 stick butter 1 tsp olive oil Salt & pepper to taste Pinch of sugar 1 Tbs white wine
Preparation
In a saucepan over medium heat, melt butter and olive oil.
When butter is melted, add onion and let it cook for about 5 minutes then add salt pepper and sugar to stir in and lower the heat. Let it cook for another five minutes, add wine, stir in and let the onion cool down.
For the puffs
Ingredients
3/4 cup butter 1 1/2 cups flour 1/2 cup cold water 1 egg beaten ( for egg wash) Pinch of salt
Preparation
Mix flour and salt in a bowl. Incorporate the butter and work with a fork or pastry cutter. Adding enough cold water until mixture come together in an elastic dough. Dust the rolling surface and start roll out the dough. Form a rectangle shape. Cut the dough into circles and fill half of them with the onion mixture. Top with other circle and press the ends with a fork in order to seal them. Brush each puff with egg wash and place in a cookie sheet with parchment paper. Bake in a preheat oven 375 for about 15 To 20 minutes or until done.
